A short while back I shared a Mixed Berry Banana Bread recipe on Instagram and it went down a treat. Lots of people messaged to say they were having a go and we make it at least once a week if not more.
Initially I baked a loaf to portion up and freeze for snacks for the baby, but it quickly became my husband’s favourite snack too and has been a staple in our household ever since.
I thought I would share it on the blog as it is a great treat to have on hand, can be made in bulk and frozen and as far as cakey treats go it isn’t too unhealthy.
Another reason I love this recipe is because it can be adapted and changed however you like. We’ve made a plain version and mixed berry version but you can add whatever fruit or flavourings you want to really!
As it is made from mostly store cupboard items, it’s not an expensive recipe either though I’ve costed out exactly what ingredients we bought and worked out the cost per loaf.
In my opinion, if you already keep most of these ingredients on hand then it’s a fab budget treat!
1tsp baking powder
200g self raising flour
2 mashed bananas
100g unsalted butter (melted)
1tsp vanilla essence
Any fruit you want to add – I usually throw in a handful of frozen mixed berries
(can also be frozen, just allow to defrost and it’s ready to eat)
